Whole Wheat Chocolate Cookies
Somedays you really want a punch of chocolate, to the face and these whole wheat chocolate cookies deliver. The whole-wheat flour helps balance out the sweetness, and gives it a whole-some note that sort of justifies eating several of these, right??? Whip these cookies up, grab a cup of milk and a cookie hot from the oven, and tuck in for a cozy afternoon at home.
We shot a cozy day at home on our Youtube Forgotten Way Farms, I will add it to today’s post! I hope it will get you in the mood to bake these and enjoy a day of hygge at your home.

Is it hard to grind whole wheat?
No, it’s super easy! However, you do need to invest in a grain grinder. This is the one I use Nutrimill It’s as simple as adding whole grain into the grain grinder hopper and you have fresh flour. It’s amazing. If you aren’t ready to fall down the rabbit hole of freshly ground wheat at home… No problem, you can order online whole wheat or buy it locally.
It’s my heart’s desire to share with others the joy of baking and how easy it is to try new things. I believe others are feeling the call to get back to the basics and enjoy the simpler things in life.

- 2 eggs
- 1 tsp vanilla
- 1-1/2 cups whole wheat

Cream the butter and sugar together until fluffy, 2-3 minutes. Add the olive oil, brown sugar, 2 eggs, and vanilla and mix until combined.

In a small bowl combine both flours, baking soda, cocoa powder, and salt. Add to the wet mixture and combine.

Today we are tucking into a cold winter’s day, staying cozy and practicing our hygge lifestyle. I love baking on days like this in my cozy winter kitchen and drinking lots of tea! Afternoons like this are made for baking (check out my chocolate cream pie), hot drinks, books, knitting, music, painting and sketching, playing games, candles, poems, talking, laughing, or just sitting and staring at the warm fireside.

Great cookies! They turned out great! Also added some extra vanilla and extra cocoa powder for a fuller chocolate flavor.
