Salmon Gravy & Quinoa Recipe

Life has been crazy busy lately, Mom and I are working on the blog and we’ve got a video in the making which is super exciting! Can’t wait to share that with everyone.

The whole family gets into it and it’s a blast to go careening through the snow. And afterward, nothing sounds better than a bowl of protein-packed Quinoa smothered in a piping hot Salmon Gravy. Oh yeah, especially with all this cold weather. We’ve been having lows of 3-4 degrees and highs of 16 degrees.

Cold weather has a way of stirring wanderlust! Travel never looks so good as when you’re snowbound in cold weather. But, a bowl of this Salmon Gravy & Quinoa will take the chill away and will leave you nice and warm. And free to plan those trips.

Salmon Gravy & Quinoa Recipe

1 lb. Salmon,

Thyme, Red Pepper Flakes for seasoning,

2 C. Dry Quinoa,

4 C. Water, (or chicken broth for an extra nourishing touch)

1/4 C. Butter

1/4 tsp. Dill Weed,

Black Pepper to taste,

3/4 C. Flour,

6 C. Milk,

Preheat oven to 400 degrees

Instructions

I used 1 lb. Frozen Salmon fillets, it would have been better to have thought ahead and had them defrosting. But this is how I made it work.

Place fish fillets skin side down in a greased 8×8 pan (or use parchment paper for easy cleanup). Drizzle with Olive Oil, and sprinkle with Thyme and Red Pepper Flakes.

Bake for 35-40 min. (If using defrosted or fresh Salmon, cook for 15-20 min.)

Or until fish flakes apart when teased with a fork.

While the fish is baking, get the 4 C. of Water into a pan and add the 2 C. Dry Quinoa.

For a more nourishing touch, you could use 4 C. Chicken Broth instead of Water.

When the Water and Quinoa come to a boil, turn the heat down and cover the pan with a lid and let simmer for 15 min.

Turn the heat off and fluff the Quinoa with a fork.

In another pan, melt the butter with the Dill Weed and a little Black Pepper. Let it bloom and become fragrant.

Now, in a quart jar add 3 C. Milk and 3/4 C. Flour, screw a lid on and shake it up!

Now, pour the Milk/Flour mixture through a sieve into the Butter and Herbs.

And over medium heat whisk the remaining 3 C. Milk into the Milk/Flour/Butter mixture.

Just keep whisking until it’s thickened to a nice consistency.

Keep warm over low heat until Salmon is ready. Shred the baked Salmon and add to the gravy.

    Oh Jo, this sounds delicious and although we are in the midst of summer here in Australia, this will be a recipe I will keep for our winter months. Lovely also to see families having fun together in the snow. Looking forward to seeing your video.

    Good morning. Just wanted to drop in to let you know I’ve followed your blog for years. I think I agree with your view on home…it should be cozy. This recipe fits that mindset well. I’m wondering how I can adapt it to fit my new eating choices. Have you used nonfat Greek yogurt in any of your recipes?

This blog has gone thru a lot of changes over the years, but still, the same heart in my writing 🙂 I love Greek yogurt, as to apply to recipes, I’m not sure what you mean? I’m not sure what your new eating choices are. I think any recipe can be adapted somewhat; you might just have to experiment. Thank you for taking the time to leave a comment, it was sooo nice!
