Squash, they are my special plants to grow in the garden, I like to try lots of different varieties, and I always think of my Granny and the timeI spent gardening with her when I was little. It seems like so many of my memories are tied in with food, growing food, harvesting food.
I want to give my kids those same memories! And I hope this soup inspires you to try your hand at growing some amazing heirloom squash this summer.
Roasted Squash Soup
Ingredients
- 3 cloves of garlic
- 1/2 of a large onion
- olive oil
- 8 C. Roasted Squash
- 4 C. Chicken Broth
- 1 C. parmesan
- nutmeg
- pint of cream
- Salt and pepper
- 1/2 C. Butter
Instructions

In a large pot, sauté minced garlic and diced onion together in a couple tablespoons of olive oil.

Add the roasted squash, chicken broth, and stir into the sautéed mixture. Simmer together for ten minutes. After ten minutes of simmering, add the parmesan cheese and cream. For seasoning, a dash of nutmeg and salt & pepper to your taste. Heat thoroughly, on a LOW simmer. Now, add the butter and blend together in batches in your blender or use an immersion blender until creamy and smooth. Garnish with slivers of parmesan and enjoy!
Just a side note, this soup is so creamy and rich, I feel like a queen when I eat it. I do, I’m not lying.
