Favorite baked oatmeal recipes

My favorite baked oatmeal recipes are a nice variation of the traditional oatmeal hot cereal. I have always been a fan of oatmeal for breakfast, but baked oatmeal makes me feel like I’m having a dessert for breakfast in the best sort of way. Add some eggs and bacon and you have a full-on big breakfast for the weekend.

Freezer Breakfast Meals

I make this recipe in one of my breakfast freezer meal videos, will add it to this post if you are interested in watching me make it and freeze it for later use. I love having a few good breakfast meals in my freezer, and baked oatmeal freezes well. Set it out the night before in the fridge and reheat at 350F for 20-30mins

Baked Oatmeal

My Two Favorite Recipes are Amish Baked Oatmeal and Chocolate Peanut Butter Baked Oatmeal both recipes are printable below:

Amish Baked Oatmeal

Ingredients

  • 1/2 cup Butter (Melted )
  • 2 cups Quick Oats
  • 1/2 cup Brown Sugar or Maple Syrup
  • 3/4 cup Whole Milk
  • 1 tsp vanilla extract or paste
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 Egg
  • 1/2 cup Chopped Pecans
  • 1/2- 3/4 cup Blueberries

Instructions

  1. Mix oats, sugar, and butter together. Slowly mix in the milk and egg. Next add the vanilla, cinnamon, nutmeg, salt, and baking powder. Stir together and pour into a 9x13 pan or for a thicker slice of baked oatmeal you can use an 8x8 pan.

  2. Bake at 350F for 30 minutes

  3. Serve with cream or milk

Chocolate Peanut Butter Baked Oatmeal - Single Servings

Ingredients

  • 2 Ripe Bananas
  • 1 1/2 cups Milk
  • 2 Eggs
  • 4 tbsp Peanut butter
  • 1/3 cup Brown Sugar or Maple Syrup
  • 2 tsp Vanilla extract or paste
  • 3 cups Old Fashioned Rolled Oats
  • 1/2 cup Baking Cocoa
  • 1 tsp Baking powder
  • 1/2 tsp salt
  • 3/4 cup Semisweet Chocolate Chips

Instructions

  1. Mash bananas add milk, eggs, peanut butter, brown sugar, and vanilla to the bananas, and mix thoroughly. Stir into banana mixture oats, baking cocoa, baking powder, salt, and chocolate chips.

  2. Pour into well-greased muffin tins

  3. Bake at 350F for 20-25 minutes

  4. Makes 12-18 muffins depending on how full you fill the cups.

These are a few of my favorite toppings that we like to add to our baked oatmeal. You can eat without toppings too, both options are delicious. The Chocolate Peanut Butter Baked Oatmeal – Single Serving muffins are great for taking on the go.

 

Economical and Thrifty

Oats are a perfect way to stretch that budget. You can ditch those high-priced boxed cereals and put this on your breakfast rotation.
