Breakfast Freezer Meal Recipes

Making freezer breakfast meals is a great way to save money, free up time, and have easy healthy options for breakfast. In today’s video, I share some of my favorite breakfast freezer meal recipes.

 I will link all the recipes below or explain how I make them. Follow along with the YouTube video as well.

Whole Wheat Waffles – these are my kid’s favorite quick breakfast go-to. Reheat in the toaster or oven.

Amish Baked Oatmeal & Chocolate Baked Oatmeal Cups – a great way to dress up oatmeal.

 

Enchilada Breakfast Casserole with Homemade Enchilada Sauce

In the video I take the same filling I’m using for the breakfast burritos (egg, ham, roasted potatoes) and add it to a bowl with two cans of refried beans. When freezing several enchilada breakfast casseroles I just make a big batch of this mix by eyeing the amounts and any leftovers can be used to make more breakfast burritos. 

I like to use corn tortillas and layer them taco-style to make it quick and easy.

Breakfast Burritos

Breakfast Burritos are seriously an addiction in this house and my husband and son love taking them to work. We also take them on road and camping trips. They heat up great in the oven, microwave, or over a campfire.

My Favorite Fillings for breakfast burritos: are eggs, potatoes, sweet potatoes, roasted vegetables, onions, mushrooms, peppers, ham, sausage, bacon, cheese, salsa, sour cream, and avocado.

Roasting Potatoes – I like to cut mine into chunks, and liberally toss in olive oil and spices (in today’s video I used Montreal Steak Seasoning and it made the potatoes extra peppery, we loved it) Bake at 400F for 20-30 minutes. I roast potatoes all the time and have them ready to use in so many dishes. 

Breakfast Bagels

Easy and fast way to make a whole bunch of single-serve meals that are ready to go. I like making my eggs using the Egg Sheet Pan Recipe. I will add the recipe below.

My favorite toppings for breakfast bagels – Cheese, eggs, bacon, sausage patties, avocados, and mushrooms.

Sheet Pan Eggs

Prep Time 5 minutes
Cook Time 15 minutes
Servings 12

Ingredients

  • 18 eggs
  • 1/4 cup milk or cream

Instructions

  1. Crack eggs into a blender, add cream/milk pour onto a well-greased sheet pan with parchment paper. Cook for 15-18 minutes or until set. Extras- you may add grated cheese, peppers, onions, or mushrooms before baking if you like.

  2. Bake at 350F for 15-18 minutes or until set

  3. Cut into 12 square servings for breakfast bagels

Also… you saw me make my favorite Pourable Crust Pot Pie Casserole (linked to the recipe) I love my pourable crust recipe because in a pinch I can basically take any meat, vegetable, sauce, or gravy, and I have a delicious dinner that my family loves.
